Ingredients:
- 1 tablespoon oil (We recommend avocado oil or olive oil)
- 1 pound lean ground beef, turkey or chicken
- 1 package Watkins Organic Taco Seasoning Mix
- ¾ cup water
- 12 ounces tortilla chips
- 1 15-ounce can black beans, drained and rinsed
- 1 cup corn kernels, frozen, canned or roasted
- 1 cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 1 tomato, diced
- ¼ cup diced red onion
- 2 tablespoons sour cream
- 2 teaspoons Watkins Organic Cilantro Leaves
- 1 jalapeno, thinly sliced (optional)
Instructions:
- Preheat oven to 400 degrees F.
- Lightly oil a baking sheet or cover a baking sheet with aluminum foil for easy cleanup.
- Heat olive oil in a large skillet over medium-high heat. Add ground meat and cook until beef has browned. Drain excess fat. Stir in Watkins Organic Taco Seasoning Mix and water. Bring to a boil and then simmer for 5 minutes.
- Place tortilla chips in a single layer onto the prepared baking sheet. Top with ground meat mixture, black beans, corn, and cheese.
- Place into oven and bake until heated for about 5 minutes or until the cheese has melted
- Serve immediately, topped with tomato, onion, jalapeno, sour cream, and Watkins Organic Cilantro Leaves.
