Weeknight Sheet Pan Gnocchi

Ingredients

  • 1 16 ounce package of uncooked gnocchi
  • 1 pint cherry tomatoes
  • 1 red pepper, chopped
  • 1 orange pepper, chopped
  • ½ red onion, chopped
  • 3 tablespoons olive oil
  • ½ teaspoon Watkins Organic Oregano Leaves
  • ½ teaspoon Watkins Organic Basil Leaves
  • 1 teaspoon Watkins Organic Garlic Powder
  • ½ teaspoon Watkins Organic Ground Black Pepper
  • ½ teaspoon Watkins Fine Himalayan Pink Salt
  • 1 pinch Watkins Organic Crushed Red Pepper
  • Optional: shaved parmesan cheese

 

Instructions:

  • Preheat your oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and coat with olive oil spray.
  • Spread the uncooked gnocchi, tomatoes, peppers, and onions on the baking sheet.
  • Drizzle gnocchi and vegetables with 3 tablespoons olive oil & sprinkle with Watkins Organic Spices and Herbs. Toss to combine.
  • Place the baking sheet in the oven for 20 to 25 minutes; stir halfway through.
  • Serve the gnocchi immediately. Serve with shaved parmesan cheese.
