Ingredients
- 1 16 ounce package of uncooked gnocchi
- 1 pint cherry tomatoes
- 1 red pepper, chopped
- 1 orange pepper, chopped
- ½ red onion, chopped
- 3 tablespoons olive oil
- ½ teaspoon Watkins Organic Oregano Leaves
- ½ teaspoon Watkins Organic Basil Leaves
- 1 teaspoon Watkins Organic Garlic Powder
- ½ teaspoon Watkins Organic Ground Black Pepper
- ½ teaspoon Watkins Fine Himalayan Pink Salt
- 1 pinch Watkins Organic Crushed Red Pepper
- Optional: shaved parmesan cheese
Instructions:
- Preheat your oven to 425 degrees F.
- Line a baking sheet with aluminum foil and coat with olive oil spray.
- Spread the uncooked gnocchi, tomatoes, peppers, and onions on the baking sheet.
- Drizzle gnocchi and vegetables with 3 tablespoons olive oil & sprinkle with Watkins Organic Spices and Herbs. Toss to combine.
- Place the baking sheet in the oven for 20 to 25 minutes; stir halfway through.
- Serve the gnocchi immediately. Serve with shaved parmesan cheese.
