Watkins Pumpkin Pie Overnight Oats

Ingredients

  • 1/2 teaspoon/4 ml Watkins Pure Vanilla Extract
  • 1/4 cup/65 g plain Greek yogurt
  • 1/2 cup/118 m; unsweetened milk, dairy or non-dairy
  • 1/4 cup/65 g pumpkin puree, not pumpkin pie filling!
  • 1-2 tablespoons / 15-30 ml pure maple syrup to taste
  • 1/2 cup/ 40 g rolled oats, gluten or gluten-free
  • 2 teaspoons / 15 g chia seeds
  • 1/2 teaspoon/4 ml Watkins Pumpkin Pie Spice

Optional Toppings: chopped nuts, whipped cream, pumpkin seeds, granola

 

Directions

  • Mix together Greek yogurt, milk, pumpkin puree, maple syrup, and Watkins Pure Vanilla Extract until well combined.
  • Stir in oats, chia seeds, and Watkins Pumpkin Pie Spice until completely combined.
  • Taste and add more maple syrup if you would like a sweeter flavor.
  • Pour into a single serving container and place in the refrigerator for at least 4 hours, or ideally overnight.
  • When ready to eat, remove from refrigerator and top as desired. Enjoy!
  • Top with Makes 1 serving of pumpkin overnight oats.

Bake Time: 25 Minutes

Cool Time: 4 hours minimum
